When you sell milk to a collection centre or processor, you are increasingly paid not just for litres but for what the milk contains. Two numbers decide that: fat and SNF.

What fat and SNF are

  • Fat is the cream portion of milk.
  • SNF (solids-not-fat) is everything solid that is not fat: protein, lactose (milk sugar) and minerals.
  • Total solids (TS) = fat + SNF. Many buyers in Pakistan quote a price per kilogram of total solids.

Typical values

These vary with breed, stage of lactation, season and feeding:

  • Buffalo milk: fat often around 6–8%, SNF around 9–10%.
  • Cow milk: fat often around 3.5–4.5%, SNF around 8–9%.

Buffalo milk is richer, which is why it usually earns a higher price per litre.

How milk is priced

Buyers use different formulas, so ask yours exactly how they calculate. Common approaches:

  1. Price per kg of total solids: litres × density (about 1.03 kg/L) × (fat% + SNF%) ÷ 100 × rate per kg TS.
  2. Separate fat and SNF rates: each component is paid by weight at its own rate.
  3. Base price per litre with a fat adjustment above or below a standard.

Our free milk price calculator lets you enter litres, fat, SNF and your buyer's rate to see what a delivery should be worth.

Why fat or SNF can be low

  • Low fibre in the diet (too much concentrate, too little good roughage) — fat drops first.
  • Energy or protein shortage — SNF, especially protein, falls.
  • Early lactation and heat stress.
  • Mastitis, which changes milk composition.
  • Adding water (adulteration) dilutes SNF and is easily detected by a lactometer and freezing-point tests.

How to improve fat and SNF through feeding

  • Provide enough long, good-quality roughage (green fodder, silage, and some dry fodder) to keep the rumen healthy.
  • Balance concentrate with roughage rather than replacing it.
  • Make sure energy and protein match the milk yield; ask a nutritionist to check the ration for high-yielding animals.
  • Provide mineral mixture and salt daily.
  • Keep animals cool in summer and treat mastitis early.

Recording fat and SNF for each animal over time shows which animals and which feeding changes actually pay. MTK Dairy lets you log fat and SNF with each milking.

Frequently asked questions

What is SNF in milk?

Solids-not-fat: the protein, lactose and minerals in milk. Total solids are fat plus SNF.

What is a normal fat percentage in buffalo milk?

Commonly around 6–8%, depending on breed, lactation stage, season and feeding.

How can I increase fat in milk?

Keep enough long, good-quality roughage in the diet, balance concentrates, provide minerals, keep animals cool and control mastitis.
